"Introduction to Raw Foods"

A raw food diet is chiefly comprised of uncooked and unprocessed foods, including nuts, sprouts, beans, fresh juice, grains, fresh fruit and vegetables, and dried fruits.

Why is it important to keep these foods uncooked. According to raw foodist's beliefs, heating destroys essential enzymes in our food. It is believed that these enzymes aid in the absorption and digestion of food, and bring about overall health improvements. Most raw food diets are not comprised of 100% uncooked, raw, living and unprocessed plant foods. A normal raw food diet contains 75% raw foods, with the idea that the higher the percentage, the higher the health benefits.

People promoting a raw food lifestyle claim it can improve many things, mainly: weight loss, optimum digestion, less chance of heart disease, healthier skin and improved energy. This is likely due to the higher levels of nutrients, enzymes and phytochemicals. At the same time there is a lower level of sodium and unhealthy fats in a raw food diet.

A common thing people wonder about is how the food is prepared if there is no cooking involved. Apart from just eating it in its raw natural state, food can be soaked, sprouted, dried, fermented, blended or juiced. This techniques are accomplished using the appropriate equipment; such as glass jars, dehydrators (which do not get hot enough to destroy enzymes), blenders or juice extractors.

Detoxifying the body, or 'detox' is typically done before starting a raw foods diet. There is some disagreement amongst the medical community as to its effectiveness, but raw foodists believe that the bod must be flushed of its toxins. A detox may last several days and have some side effects as your body makes adjustments.

It is a good idea to consult with your doctor to see if there are any risks associated with your current medical conditions. If you are underweight or pregnant, your doctor may be extra-cautious. You may still be able to eat a raw food diet, but you need to know what to watch out for.

Once you have decided to switch to a raw food diet, you may want to learn a little bit more. Some raw food recipes call for ingredients that could be hard to find. That is okay, try recipes that contain readily available ingredients until you can find a good source for those that are hard to find. It is easier to find processed and cooked foods (cooked at any stage of the process, including pasteurization), than it is to find special raw foods. So, once you find a good source - stick with it.
